Grilled Spicy Soy Chicken Drumsticks
A warm and sunny Summer Sunday is made for lighting up the barbecue and making a meal of smoky grilled meat or fish. There is something contemplative about watching wood and coat set alight, the hypnotic dance of fire and flames, until they turn to red embers, which perfectly suit a lazy day. And besides the setting of the barbecue, preparing the meat takes very little effort: it's a matter of assembling a marinade and forgetting it in the fridge for a few hours, and then, it cooks in minutes!
Thus I reckon it's well worth it to fire up the barbie and make these finger-licking delicious Grilled Spicy Soy Chicken Drumsticks, even if it's just for yourself! Happy Sunday!
Ingredients (serves 1):
1 heaped tablespoon Hot Pepper Sauce
1 tablespoon soy sauce
2 heaped teaspoons honey
1 teaspoon toasted sesame oil
3 beautiful chicken drumsticks
In a shallow dish or plate, combine Hot Pepper Sauce, soy sauce, honey and sesame oil, stirring well until perfectly blended.
With a sharp knife, score the flesh of the chicken drumsticks. Place drumsticks in the dish and toss well with clean hands, thoroughly rubbing marinade into the chicken flesh.
Cover with cling film and place in the refrigerator, to marinate, at least a couple of hours.
Prepare barbecue: half an hour before grilling, arrange a layer of coals in the barbecue. Top with a few small branches of wood (applewood gives good taste), and light.
Wait for the flames to die down, and place the marinated chicken drumsticks on the grill over the red embers. Grill, about 7 minutes on each side until well-cooked through, and nicely charred. As you turn drumsticks on the grill, generously brush with remaining marinade, and once more just before serving, to glaze them nicely.
Serve Grilled Spicy Soy Chicken Drumsticks hot, with a side of mango salad or, and a glass of chilled Gris Rosé or Chardonnay.

What Sonic and friends bring to the barbecue:
Sonic: Hot dogs, naturally, but with chili and condiments in separate containers, because he’s finally, begrudgingly, accepted that not everyone wants chili dogs all the time like he does.
Tails: A big bowl of salad, made up of the various salads he’s tried, and failed, to get Sonic to eat with his chili dogs whenever it’s lunch time.
Knuckles: Basket of various fruits and edible plants picked across Angel Island that he swears on his ancestors are better than any of the processed junk Sonic eats. Provided that the fruit and veggies he brought aren’t the poisonous ones that are near indistinguishable from the non poisonous ones. He’s pretty sure he picked the non poisonous ones. Almost certainly.
Amy: Plate of tofu dogs, mainly for Sonic, Tails, and Cream (as they are her boyfriend, little brother, and little sister, respectively,) at the expense of everyone else. Anyone else who are not those three so much has go near the dogs gets the hammer. When no one is looking she’ll sneak a chili dog or five for herself.
Cream: Tub of homemade ice cream that she made all by herself and is super proud of that Vanilla knows for a fact will be too sweet for everyone else and keeps a packet of Tums for anyone brave enough to try it.
Big: A massive fish that he quite literally just caught that day for the barbecue that he intends to prepare and cook on the spot. By the time it will be gone everyone else is packing up to go. It will be the best fish anyone had ever tasted, though.
Vanilla: Plain, simple sliders and cold cuts, just so that everyone not name Sonic will have something normal to eat.
Vector: His best, and only, tuxedo and monocle, convinced he can turn the barbecue into a date between himself and Vanilla. (It’s also a distraction for Espio and Charmy to sneak off with the food so that they will have something in the fridge for the next month or two, but mostly it’s a chance at a date with Vanilla.)
Espio: His sword and armor to fend off Amy for when while Charmy makes off with the food, especially her tofu dogs (which he wants most of all the food, even though Vector told him to ignore it. Espio will not be denied.)
Charmy: The tupperware containers, supposedly, to steal the food with, but left them at home, and immediately forgets about helping Vector and Espio when he sees Cream brought her homemade ice cream.
Shadow: What started as a simple beef stew then quickly turned into an amalgamation of ingredients because he felt it wasn’t “ultimate” enough. Now a vat of what can only be described as “substance.” Tails takes it home for further study.
Rouge: An ice sculpture she…burrowed from a police ball she attended. She doesn’t remember when she stole it nor how she kept it cold for so long.
Omega: Is the barbecue grill.
Topaz: Is the grill master.
Blaze: Her whole kitchen staff to make a feast worthy of a king. They have a grill off against Topaz and Vanilla for the right to cook the food and shockingly lose. They then spend the rest of the day following Vanilla’s instructions on how to make boxes lunches.
Silver: His telekinesis powers to carry all of the kitchen equipment. At first annoyed when the kitchen staff lose and weren’t going to use the kitchen he worked hard to get between dimensions but settles down once he tries Cream’s ice cream (and then immediately passes out from the sugar rush.)
Marine: Was the one to convince Blaze to leave the castle for a chance to relax.
Babylon Rogues: Weren’t invited but show up anyway to show off their homemade dish, said to have been passed down from generation to generation. However, beforehand, Jet and Wave got into an argument about how to make it and ended up making two versions of the same dish. Jet’s version deviates from the recipe the most, with too many spices and sauces added on, while Wave’s dish is exact but is bland and flavorless because Jet used up most of the seasoning. They make up by feeding their food to Storm and just stealing all the rest at the barbecue.

sunaosa week day 5: bento
training is often split into morning and afternoon sessions, with conditioning in the first half, and practice in the second half. the athletes are given two hours in between for lunch, many opting to return home to cook, following the strict diet created for them by their nutritionist, with a few staying at the gym to eat in the lounge, using the microwave, toaster, or electric kettle to warm up homemade lunches, leftovers, or a haphazardly assembled combini meal from the 7-eleven across the street.
komori, washio, and suna often eat together, newbies of the team. komori is a decent cook, although he hasn’t graduated beyond burnt eggs, soggy rice, and using soy sauce to season everything. washio is better, often spending his weekends experimenting with new recipes, like barbecue-glazed ribs, butter shoyu chicken, and tonkatsu ramen.
suna, on the other hand, can’t cook to save his life, unless it’s reheating leftovers or adding noodles to boiling water. and yet, he brings a bento made with love every day – grilled fish, seaweed salad, pickled vegetables, and absolutely divine tamagoyaki that komori always steals whenever he isn’t looking.
“hey, guys!” nagito slides into the empty seat beside komori with his 7-eleven haul – three onigiri, two sandwiches, several energy bars, and a carton of juice. “what’s everyone eating?”
they show him their various bento boxes, but nagito only whistles at suna’s. “the boyfriend does it again! i thought the two of you are long-distance?”
“yeah, but he’s staying with me for a month as a break,” suna replies. “i tried telling him that he doesn’t have to cook for me, but i can’t keep him out of the kitchen. he’s been stressed out lately with the restaurant, and i want him to cook for fun while he’s here.”
“maybe he can give motoya a cooking lesson,” washio suggests. “pivoting your focus away from work to instructional might help him relax.”
“are you saying that my cooking sucks?” komori asks, showing off his poor bento of rice covered in furikake and soggy karaage that he picked up yesterday at the supermarket.
"yes. i could use a lesson, too. i want his expertise on how to grill fish.”
suna nods, taking his phone out. “sure, i can ask. you want in, nagito?”
“might as well,” he chirps. “it beats having combini food every day!”
the middle blocker sends a text to his boyfriend, and they continue their discussion about coach’s proposed rotational changes, and the exhibition match scheduled at the end of the month. when practice starts again, they pack their bento boxes and head for the locker room.
komori eats the same thing every day, so he makes a game with nagito to predict what protein their teammates will bring. washio is more of a red meat guy, but suna often has fish, until one day, he brings a huge container of pork gyoza to share. “’samu was experimenting with a new recipe,” he said as explanation.
“osamu should move in with you permanently,” komori says, plucking another gyoza from the tray.
“trust me, we want to. maybe in the future.”
it continues for the rest of the week. after the weekend, the group gathers for lunch, komori proudly revealing his soba noodles instead of soggy rice. “you upgraded,” washio remarks. today, he has sushi made from scratch.
“nagito and i split a huge pack of soba noodles! the supermarket sold bottles of sauce too, which helps.”
“oh, you went with boiled noodles!” nagito slides into his seat beside komori. “check out what i made!” he lifts his lid off, the irresistible scent of yakisoba filling the room.
komori is immediately envious. “i thought you didn’t know how to cook!”
“it wasn’t that hard! i just followed a recipe online and fried everything together. a lot of noodles got stuck to the pan, though. i had to toss it.”
washio chuckles, but it’s short-lived. “i guess suna isn’t joining us today.” he was late to conditioning too, haggard with dark circles around his eyes. komori lost track of him after they stopped for lunch.
it’s about an hour into their lunch that suna appears, sliding into the seat beside washio. “hey.”
“where did you go?” komori asks, in lieu of a greeting.
“had to go back home for a bit. i didn’t want to bother ‘samu, so i came here to eat.” instead of putting his usual bento box on the table, it’s a bag from 7-eleven. inside are sandwiches, a gyudon, several protein bars, and energy jelly. he drags his feet to the microwave to heat his gyudon.
“no bento today?” nagito ventures when he sits back down. suna simply shakes his head, leaving it at that.
komori doesn’t push, but then the same thing happens the next day, and then the next. by the fourth day, he just sleeps while they eat, until nagito pokes him with his chopstick. “hey, you need food. did you bring lunch?”
“no,” comes the muffled reply.
“did something happen between you and osamu?” komori asks. “like…like…a fight? or…”
suna turns his head until he’s facing them. “no. i mean, kind of. he was being…stubborn when i tried telling him to rest more. the next day, when i came home, i found him collapsed with a fever.”
“oh.”
“why aren’t you with him?” nagito asks.
“his stubborn ass won’t let me take care of him, said he doesn’t want to interfere with my training. i asked coach for time off, but ‘samu insisted.” suna’s eyes glitter with unshed tears. “i didn’t want to make him more upset, so…”
washio places a comforting hand on his shoulder. “i’m sorry to hear that.”
“let’s buy medicine and food for him after practice,” komori suggests. “you also need food. i’ll run out to 7-eleven and grab something.”
“i’m not hungry–“
“too bad,” nagito says, snapping his bento lid shut. “you need to stay healthy if you want to take care of miya. we’ll be right back.”
after practice, they split between the supermarket and pharmacy, reconvening at a nearby restaurant to pick up takeout. they follow suna home, stepping inside the darkened apartment. “’samu?”
coughing answers him. suna doesn’t hesitate to drop his bag and kick his shoes off, hurrying to the bedroom. komori, washio, and nagito linger in the kitchen, putting takeout containers in the fridge, heating congee in a small pot, and getting a glass of water ready with medicine. washio transfers the warm congee into a bowl, nagito finding a tray to put everything on. komori carries it to the bedroom, where he hears hushed voices.
“ya don’t hafta worry ‘bout me,” is osamu’s rasp. “i can care fer myself.”
“’samu, your fever is over 37 degrees,” suna says softly. “i know you can care for yourself, but you aren’t alone. i’m here. and…” he glances over his shoulder at the trio. “there are others that want to help, too.”
komori enters, putting the tray on the desk. osamu is under the covers, cold compress on his forehead that’s slick with sweat. washio and nagito step into view, as well. “suna is right,” washio says. “we all need a helping hand once in a while.”
“just let your boyfriend coddle you,” nagito adds.
“exactly. thank you, nagito.” suna turns back to osamu. “we have food for you, too. can you sit up?”

Celebrating July 4th in Strange Times, Pt 1
I'm still recovering from the literal assault of a week we all just went through. And it's only Wednesday. Time to UNHOOK AND COOK.
I'm not thinkin' too clearly, but like i've often said here on this hellsite (meh): when in doubt, BAKE. And COOK.
I had no idea just why, but my old friend/landlord back in Austin came to mind yesterday, and as a result, this felafel recipe. His grandmother was Lebanese. His grandfather was Italian. And then my old friend who is second-generation Armenian immigrant came to mind, as well.
This felafel recipe is "authentic", and pretty basic to people who know, but to this heavily-breaded and chicken-fried Texas boy, it was a revelation.
Final confirmation the boy knows his felafel came from Chef roomie yesterday that they were, indeed, beatiful and tasty, with the homemade tzatziki as dunkin' sauce.
So this occupied me yesterday, still over a dozen felafel balls left, and lots of tzatziki, and it hit me to celebrate in my own way by making an "All American" dinner that is a blend of food friends have all enjoyed in dinners past.
We'll have those heated, along with more dipping sauce, beside a batch of my oven-baked Italian meatballs, and oven-barbecued chicken thighs, with homemade barbecue sauce (goes great on the meatballs as well!), and my version of potato salad.
As far as dessert, I started today by making a batch of super-vanilla no-churn ice cream in the hottest part of the afternoon. Thought that might cause problems, but it's already setting, so that's good. I am also gonna make a coffee-chocolate sauce to go on top, along with a dollop of the red raspberry freezer jam I made last week.
OK: First things first,
Felafel Recipe
2 cups (dry measure) dried garbanzo beans
4 cups cold water
1 bunch parsley
5-6+ cloves garlic
1 large onion
2 tablespoons of cumin
1 heaping tablespoon of baking powder
3 tablespoons of flour
1 teaspoon salt
Pepper to taste
Put dried garbanzos and water in a medium-small bowl or 4-cup liquid measure pyrex cup. Cover and put in fridge at least over night. They will expand! Leave them for 24-36 hours, until they have at least doubled in volume.
After they have soaked, drain and put in food processor bowl, with regular blade. Put the rest of the ingredients in on top of the garbanzos. Chop the parsley in half first, spread the dried ingredients evenly.
Put the cover on and process, pulse at first, until you see the desired color and texture start to happen. Stop and scrape, then turn on and leave on until you get a grainy texture and STOP.
Transfer to another bowl, cover and refrigerate until you're ready to fry.
Tzatziki Recipe:
1 cup sour cream (or Greek Yogurt)
1 cucumber
Salt/Pepper
Use the large grates on a cheese grater, grate the cucumber into a small bowl. Sprinkle liberally with about a teaspoon of salt. Mash it around, until you see the green liquid start for form. Take and strain, mashing the rest of the water and salt out. Mix with the sour cream and chill.
Fry the felafel into small (1 to 1 1/2") balls, using a teaspoon to help you form the balls. Drop them one at a time into the "chicken-frying hot" fat of your choice. Fry until a dark-golden brown. Serve with the Tzatziki as a dip. The felafel balls freeze and re-heat well.
I'll post the rest of it as it happens tomorrow. I think i've posted the ice-cream recipe before, this time basic vanilla, thus the coffee-chocolate sauce and raspberry jam.

Description: You and your girlfriend make each other meals from your cultures
You smile making fried green tomatoes while music plays throughout the kitchen waiting for your girlfriend to come home. You decided to make a few southern dishes you grew up eating with your family to show more of your culture to Zelina, you first made cajun baked catfish with a roll and asparagus followed by homemade barbequed pork and chicken with mashed potatoes and corn then finally your mom's recipe of fried green tomatoes with peas, sweet corn, and mashed potatoes keeping them warm in the oven until zelina came home and sat down after showering and changing "Hey baby i got a few things for you" you hand her the barbeque which she groans in joy while eating and smiles at you while eating "Oh my god this is amazing". The next day for lunch you both eat fried green tomatoes and she immediately is stunned and in awe as she eats until she is finished "Baby you gotta make these again soon Jesus" then later that same day you both have cajun baked catfish and she just swallows it after squeezing lemon juice over it "Damn Mija! You gotta make this for Rey and the boys!" you laugh but keep the promises, making a big batch of the catfish later that week and bringing it backstage where her friends immediately are in awe as they eat even taking leftovers home with them, you make another batch this time of the mixed barbecue which everyone also enjoyed even taking batches to other wrestlers including the bloodline, judgement day, Kevin Owens, and Liv Morgan then you made more fried green tomatoes this time in two big batches which every single person backstage eats with the homemade sweet and spicy sauce you made. You walk in the door from work to a mouth watering smell seeing zelina cooking "Ah mi vida your home!" you share a kiss before sitting down for dinner "I made you one of my favorites, pinchos they're chicken skewers" you try it and instantly melt as you continue eating "This is amazing!" the next day you groan in hunger at the delicious smell throughout the house "Another Puerto Rican classic bebe Arroz con pollo" you are in awe as you eat the rice and chicken meal full of many flavors at once followed by a flan dessert which was very tasty, later that week you walk in from work with a smile when you smell food cooking in the kitchen "More Puerto Rican flavor! Bistec encebollado" you are full of joy eating the steak and onions with rice and roasted peaches which added a unique flavor you would never forget "God thank you for sharing these with me baby" she smiles giving you a gentle kiss "Thank you for sharing yours with me mi dulces" you both smile everytime you smell the familiar scents of these meals and new smells of meals you made from your cultures to each other later on.

I talk a lot about food and recipes here, but one thing I don't talk a lot about is food on a budget or what to eat if the disordered eating kicks up and all the food is illegal.
But if I can impart any advice to you that sticks, I hope it's this: the best bang for your buck to make a food taste better is sauce. If you can tolerate the texture of it or mix it into a food so the texture goes unnoticed, then a good sauce is just the thing to zhuzh up a meal you're otherwise uninterested in. And sauces are generally pretty cheap. I mean, fast food restaurants will just give them to you by the handful sometimes.
Also sauces tend to be pretty versatile as far as meals they go with. I once got through a number of different foods with a bottle of yum yum sauce in a "when you have a hammer" type situation. Seriously, that stuff might be good on anything.
(I discovered by desperate accident that sweet potato fries with yum yum sauce hit with just a touch of jalapeno salt is actually kind of perfect. Somebody tell the local combination hibachi/burger places in town.)
Some sauces I always need more of in my life include: barbecue sauce (especially because there are different kinds for different tastes; I actually prefer this over ketchup because they have similar flavors but bbq has more kick) yum yum sauce creamy chipotle sauce ranch dressing (especially ones with peppers added for some heat) homemade honey mustard (equal parts honey, dijon mustard, and mayo hit with a dash of vinegar and salt and pepper to taste)
Seasonings in general are a good idea to keep on hand, but sauce is the boss for a reason. It's capable of doing some pretty heavy culinary lifting.
